How is Kanchipuram idli made?
Traditonally kancheepuram idlis are steamed in a bamboo basket which is lined with the leaves of the bauhinia plant. This plant is also known as kachnar in Hindi and mandharai in Tamil. The plant is also known as mountain ebony in English. Steaming idlis in mandharai leaves give it a very distinct taste and flavor.
How long to soak urad dal for idli?
Add urad dal & methi seeds to a bowl. Add rice or idli rava to another bowl. Wash them very well separately until water runs clear. Soak them separately in lot of water for at least 6 hrs.
How long to steam idlis?
Take your idli steamer or pressure cooker or electric cooker or Instant pot. Add some 2 to 2.5 cups water and heat the water until it comes to a light boil. Keep the idli mould in the steamer or pressure cooker. Steam for 12 to 15 minutes.
Is idli rice raw rice?
In conclusion, you can use idli rice and boiled rice interchangeably. You can use either rice to eat as a cooked grain or to make idlis. But you will get a chewier, sturdier grain with boiled rice. On the other hand, you will get softer, tastier idlis with idli rice.
Why my idlis are flat?
– If your idlis are too flat, it could be due to two reasons. One, there’s too much urad dal in the batter and two, the batter is too watery. Even if you end up adding too much urad, if your batter is thick, the idlis will be fine but too much water will create flat idlis and there’s really no way to fix this.

If you’re grinding the urad dal and rice separately, you will have to mix the batter as the rice can settle down but since we are grinding both together, you need not mix the batter before making idlis.

The first reason could be that you are overcooking/over steaming the idlis. The time in a regular idli steamer is about 10-12 minutes with a little resting time after cooking. The electric stove/cooker might take couple of minutes longer, but should be done within 15 minutes.

Rinse the soaked grains once or twice and grind into a slightly thick coarse batter with very little water.
